If you’re on a paleo diet, these super simple paleo pancakes are the bomb! They only use two ingredients and so they don’t get much simpler (although these carnivore pancakes /flat breads are pretty close).
Personally I’ve always been a pancake fan. I have fond memories of the staff cafeteria at my first full time job, where they sold huge, amazing pancakes, slathered in butter. I think I bought one every single day for morning tea during the time that I worked there.
Ahhhh memories…. 🙂
Those pancakes however were full of carbs, gluten, and probably sugar which are all things I’ve been avoiding for quite some time. So when I saw someone sharing this recipe a few years ago, I tried it and I really liked it.
I shared this recipe on my old website, but now that I’m consolidating everything, here I am sharing it again.
This has to be the easiest pancake recipe ever! No flours, no sweeteners, just banana and egg.
That’s right – banana – and – egg…
And so that makes these grain free pancakes suitable for anyone on a gluten free diet, along with those who are vegetarian, paleo and even some folk on a carnivore diet (or carnivore-ish) that include a little fruit.

Sheer brilliance I say…
