This zucchini noodle recipe pairs quick and easy zucchini noodles with a delicious avocado dressing. It can be eaten as a meal on its own, or as a side dish, and is suitable for all sorts of diets.

This yummy recipe is versatile and absolutely suitable for those on a vegan or vegetarian diet just as it is.

Alternatively for those on a keto or paleo type diet, just add sliced meat, chicken, cheese or eggs, season well and toss it all together.

Avocado – This Versatile Fruit Is The Star Of The Show

I just love avocados. They’ve got to be one of the most versatile foods! I mean they can be used for all sorts of dishes, both savory and sweet, from dips such as my garlic and avocado dip, to desserts like this delicious avocado chocolate mousse.

I’ve even used avocado on a keto style pizza!

When I originally created this recipe we were living in Queensland, Australia, and avocados were cheap to buy and available pretty much all year round. I always thought that we were lucky to have such easy and affordable access to such an amazingly versatile food.

So you can imagine my surprise and delight when I realised after moving back to New Zealand that locally grown avocados are just as plentiful, and often as affordable, as they were in Queensland.

Happy days!…

Anyway, last night I was looking for inspiration around dinner time. We had several ripe avocados in the fridge and I was determined that avocado was going to be a part of our meal.

What to do?….

Zucchini noodles sprang to mind and so out came the Spiraliser!

Zucchini noodles made with a Spiralizer are a marvelous addition to meals. There’s quite a variety of these noodle cutting gadgets available these days and they’re a marvelous way to use zucchini and other vegetables in a different way, and adding some inspiration to otherwise mundane meals.

I’ve actually had my spiraliser for quite a few years now. Mine was one of the original versions of these gadgets called a Spirooli. It travelled with us all around Australia and actually got quite a ‘suntan’ in the back window of our campervan….

So anyway, here’s the recipe!

Equipment

Ingredients
  

  • 1 large zucchini
  • 1/4 red onion
  • 1/2 red capsicum

Dressing Ingredients

Instructions
 

  • Noodle your zucchini using a spiraliser
  • Chop onion and capsicum into small pieces
  • Place noodles, onion and capsicum into a large bowl

Avocado Dressing

  • Place all ingredients into a blender and blend until creamy
  • Combine dressing with zuchini noodles
  • Add sliced meat, chicken, or eggs if required
  • Season to taste
